Mulino del Gabbione Pistoia Tuscany You can revive the taste and the atmosphere of old days at the "Mulino del Gabbione (the “Gabbione Mill”).
The first and the only flour mill of the zone (the Bure Valley).Built in 960 A.C. along the Torrent "la Bure" at the hands of the Benedictines Monks of the Taonas’s Abbey ,it was also place of inn for the knights of the Tau in way towards the Saint earth.
In the heart of Tuscany Apennines ,a nest of evocations between nature and literature, history of animals and fantastic personages like if it were exited from the pages of the Grimm siblings, Perrault, Barrie.
By now the paddle wheel do nol turn more, the "bottaccio "a square basin tightened between veranda and escarpment, stock water in order to set in action the grinders has been ennobled to swimming pool; the stones have been prop up, the beams of the roof healed, the "cotto" floors colour of blood have been given back the logons, the foundations have been consolidated, but the structure, the walls, the windows, the accesses and the exteriors wood land.
And grass land are still those of 1000 years ago; when the Gabion, cited from Repetti in his Geographic physicist-historical dictionary of the Tuscany, began to transform the chestnuts in flour. Remained integral and in function for the centuries future it was restructured and widened in 1647 .we still have news of the flour mill and its activities in the centuries 17and 18for abundant chestnuts flour production with which typical plates of this zone and of the Tuscany were prepared. The flour mill came used also for oils squeezing olive and walnuts the same walnuts from which they gained, putting to macerate the "malli " inside alcohol tyhe day of Saint Pietro, the nocino, digestive liqueur already produced and already Famous in the previous centuries. The new farm puts into effect them has been resumption and saved the production of this ancient liqueur. But not only the agricultural cultures have been introduced and saved but also widened creating one beautiful collection of Lilacs and Ortensie. The job is continuing to the aim to create other collections of Peonies and Camelie. The Mill is situated 13 km. far from Pistoia and to 56 km. from Florence; very good zone for daily trips to all the main art cities in Tuscany or to spend a day on the beach (Versilia) or at the Mountain (Abetone and Cimone).

Inside the ancient Mill there are available four double-bedrooms: the Rose’s Bedroom with private bath, the Bishop’s Bedroom connected to its own bathroom, put on a different level, by a little lobby and the Abbe’s Bedrooms that shares its bathroom with the Aunts’ Room.
To complete the original hospitality of the Mill, two special Apartments: the “Bottaccio” with a large well furnished kitchen, a spacious living-room with two single davenports and a large double bedroom provided with bathroom and veranda. The other apartment, called “della Tinaia” has just one large room furnished with a double davenport, a typical cooking corner surrounded by original old cupboards and, just to complete this particular space, a suggestive bath room made with big casks, included the eclectic bathtub.
All the apartments have satellite television and private telephone.
Our guests may also enjoy breakfast inside a romantic, old evanescent circling greenhouse inserted in a rare natural contest surrounded by an original collection of hydrangea and lilac, with the lovely sound of the flushing water of many rivers traversing the garden creating many little lakes full of trout and aquatic plants
In spring and summer, launch is served in the threshing floor below the wisteria’s pergola, where you can enjoy one of the most suggestive sight of the Mill with its stone made stairs and its climbing plants wrapping the little windows and covering the roof.
On the other side during winter time and whenever you can’t stay outside, we can visit all the small and ancient rooms reserved for relax and readings walking through the old kitchen, where big copper pots and pans surround the fireplace’s hood, the wood stove and the marble carved sinks; they introduce us to the suggestive Grinders’ Room changed nowadays into a convivial space while relaxing in front of a monolithic chimney burning nearly every day, your meals are served.
